Gabriele Bonci's pizza-by-the-slice shop near the Vatican Museums is known for creative toppings on light, airy dough.
Good to know
Pizzarium is Gabriele Bonci's original Rome shop, a short walk from the Vatican Museums near Cipro metro station. It serves pizza al taglio, cut to order from long trays and sold by weight, and the toppings change through the day according to what is in season. Expect classic combinations alongside more unusual ones, as well as Roman fried snacks such as supplì.
This is a casual, stand-up affair with limited space, so most people eat on the pavement outside or take slices away. Point at what you want, say roughly how big a piece, and pay by weight. It opens daily, which makes it a useful lunch stop before or after the Vatican; queues are shorter just after opening.
