Restaurant
La Pergola
Heinz Beck's rooftop restaurant at the Rome Cavalieri was the first in the city to earn three Michelin stars and remains its only three-star table.
The Testaccio original of Stefano Callegari's Trapizzino serves triangular pockets of pizza bianca filled with Roman stews and braises.
Good to know
The trapizzino, a triangle of pizza bianca split and stuffed with saucy Roman fillings, was created by pizzaiolo Stefano Callegari, and this shop on Via Giovanni Branca in Testaccio is where the brand began before spreading across Rome and beyond. Fillings rotate but typically include chicken cacciatora, meatballs in tomato sauce, oxtail and tripe, with vegetarian options too. Supplì and other fried snacks round out the menu.
It is a cheap, quick meal rather than a sit-down restaurant, ideal after exploring Testaccio's market or the Protestant Cemetery. Trapizzino now has several other branches in the city, including one on Piazza Trilussa in Trastevere and another inside Termini station's Mercato Centrale, handy if you are short of time.
