Restaurant
La Pergola
Heinz Beck's rooftop restaurant at the Rome Cavalieri was the first in the city to earn three Michelin stars and remains its only three-star table.
Founded by Felice Trivelloni in 1936, this Testaccio institution is best known for cacio e pepe tossed at the table.
Good to know
Felice Trivelloni opened his trattoria in Testaccio in 1936, and it has been a fixture of the neighbourhood ever since, now with sister venues in Milan and Turin. The dish everyone comes for is the cacio e pepe, finished at the table so the pecorino and pepper turn into a glossy sauce. The rest of the menu is equally Roman: carbonara, roast abbacchio, meatballs in tomato sauce, artichokes alla romana and a ricotta and sour cherry tart to finish.
It opens for lunch and dinner every day. Book online in advance, as walk-in tables are scarce, and note that cancellations cannot be made by phone, email or social media. Testaccio's covered market is a few minutes' walk away if you want to make a morning of it.
