Why we recommend it

Named after the 19th-century American bartender who wrote one of the first cocktail manuals, The Jerry Thomas Project was opened in 2010 by a group of Roman bartenders and presented itself as Italy's first secret bar. Behind a discreet door on narrow Vicolo Cellini, it aims to revive half-forgotten techniques and recipes, and attracts trade professionals as well as curious drinkers.

Expect a dim, intimate room, a list built around classics and their historic variations, and bartenders happy to talk through the menu. Check the website before you go for how to gain entry and reserve, as space is limited. The team also runs a more relaxed Bar Room on Via del Moro in Trastevere, which takes enquiries by WhatsApp.
