It has rich flavors, hearty ingredients, and sparkling colors. This porridge is a true culinary delight. Whether enjoyed as a main course or side dish, Nigerian Porridge is a comforting and satisfying meal that will leave you wanting more. What is Porridge in Nigeria?

“Porridge” in Nigeria also refers to “pottage”. They are both used for cooked yam, beans or plantain joined with pepper, palm oil, spices and fish. Some people also garnish it with vegetables and smoked fish. It is very healthy and has nutritional value. This is one of my favorite meal. Because I love yam. It is quite delicious when prepared especially when vegetables are added and smoked fish. Porridge also means a thick mixture with a specific consistency.

How to Prepare the Delicious Nigerian Yam Porridge

Nigerian Porridge has its roots deeply embedded in the cultural heritage of Nigeria. It is a traditional dish that has been passed down through generations, reflecting the country’s multiple delicious dishes. With its origins in the southwestern region of Nigeria, this porridge has become a popular across the country. Moreover, it is mostly prepared for special occasions, family gatherings, and festivals. In addition, the combination of local ingredients and cooking techniques has resulted in a truly unique and flavorful dish that showcases the richness of Nigerian cuisine.

Nigerian Porridge Recipe

Ingredients:

  • 2 cups of yam, peeled and cut into bite-sized cubes
  • 1 cup of red palm oil
  • 1 medium-sized onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 cups of spinach or pumpkin leaves, washed and chopped
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper (optional), finely chopped
  • 1 teaspoon of dried crayfish (optional), ground
  • 1 teaspoon of smoked fish or stockfish (optional), shredded
  • 1 teaspoon of ground dried pepper
  • 2 cups of vegetable or chicken stock
  • Salt to taste

Instructions:

  1. In a large pot, heat the red palm oil over medium heat.
  2. Add the chopped onions and minced garlic to the pot and sauté until they become translucent.
  3. Stir in the diced red bell pepper and scotch bonnet pepper (if using) and cook for a few minutes until they soften.
  4. Add the ground dried pepper, dried crayfish (if using), and smoked fish or stockfish (if using). Continue to sauté for another minute.
  5. Add the yam cubes to the pot and gently stir them into the mixture, ensuring they are well coated with the oil and spices.
  6. Pour in the vegetable or chicken stock, ensuring it covers the yam cubes.
  7. Reduce the heat to low, cover the pot, and let the porridge simmer for about 15-20 minutes or until the yam becomes tender.
  8. Once the yam is cooked, gently mash a few yam cubes against the side of the pot to thicken the porridge.
  9. Stir in the chopped spinach or pumpkin leaves and cook for an additional 5 minutes until they wilt.
  10. Season with salt to taste and give it a final stir.
  11. Nigerian Porridge is now ready to be served hot.

Traditionally, Nigerians serve this dish piping hot. They enjoy it on its own or accompany it with fried plantains, grilled fish, or a side of coleslaw.
