Coffee Lab
Isabela Raposeiras's specialty coffee café, roastery and barista school in Vila Madalena, focused on traceable microlots from named producers.
A producer, roaster and café run by champion barista Boram Um and SCA instructor Garam Um, serving coffee from the family's own farms in Bom Retiro and Pinheiros.
Good to know
Um Coffee Co. describes itself as a coffee producer, roaster and specialty café all in one, which sets it apart from most cafés in São Paulo. The business is led by Boram Um, a three-time Brazilian barista champion, and Garam Um, a barista and Specialty Coffee Association instructor who founded what the company describes as the first school in Brazil to offer all of the SCA's coffee skills certifications. The family began producing specialty coffee in 2011 and now runs two farms growing more than 38 coffee varieties.
That farm-to-cup approach shapes the menu. Coffees are sold in three ranges: varietals, a Selection line that includes a Pink Bourbon, and rare nanolots named after the founders. A visit is a chance to taste how different varieties and processing methods change the cup, and the staff can explain where each coffee was grown. Beans, a monthly subscription and coffee machines are sold online and in store, which makes this a good stop for gifts to take home. The subscription delivers two 250-gram packs a month, a way to keep drinking the farm's coffee after you return home. If you are new to specialty coffee, try comparing a varietal from the core range with one of the nanolots named after Boram and Garam Um, as the contrast shows how much variety and processing matter.
The Um Coffee Academy runs courses for anyone who wants to learn more, from home enthusiasts to aspiring professionals, building on Garam Um's work as an instructor. Check the website for course dates before you travel if you are interested.
There are two cafés. The Bom Retiro shop is on Rua Júlio Conceição, and the Pinheiros shop on Rua Pais Leme is convenient for visitors staying near Vila Madalena and Pinheiros. The website gives service hours of 8:00 to 17:00 but does not set out a day-by-day schedule, so check before making a special trip, particularly at weekends.
Um Coffee Co. suits coffee lovers who want to understand Brazilian coffee from the farm onwards, as well as solo travellers looking for a quiet morning stop. For enquiries, contact the team by phone or WhatsApp on +55 11 93372 8888 or by email at [email protected].
