Good to know
Maido is Lima's temple of Nikkei cooking, the cuisine born from the meeting of Peru and Japan. Chef Mitsuharu Tsumura, known as Micha, opened the restaurant in Miraflores in October 2009. He trained at Johnson & Wales University in the United States and then went to Japan to study its cuisine on the advice of his Japanese father, and that double background runs through everything Maido serves. In 2025 the restaurant was ranked first on The World's 50 Best Restaurants list, after placing fifth in 2024 and sixth in 2023.
Today the restaurant is built around a 12-step tasting menu. It can be taken without drinks or with one of several pairings, including a Maido pairing, a premium Tokujou pairing and a non-alcoholic option. Dishes change, but some of the restaurant's best-known creations show how far the kitchen pushes the Nikkei idea: sushi a lo pobre, a beef nigiri topped with a quail egg; guinea pig fried in duck fat with cassava cream; a short rib braised for 50 hours in a nitsuke sauce of soy, mirin and sake; and ceviche served inside a limpet shell. Tsumura also runs Maido Hub, a research workshop that feeds ideas into the menu.
Maido is open from Monday to Saturday from 13:00 and closed on Sundays. Reservations open two months in advance, on the first day of each month, for groups of one to ten, so set a reminder if you have fixed travel dates. The published prices include tax and service and can change without notice. For larger parties of 12 to 36, the Maido Hub space can be booked separately. Telephone enquiries about same-day bookings are handled from Monday to Saturday during office hours.
Maido suits food lovers, couples and anyone curious about Lima's Japanese heritage. Tell the restaurant about allergies when you book. If you can only manage one splurge in Lima, the choice between Maido and Central comes down to whether you are more drawn to Nikkei flavours or to Andean and Amazonian ingredients.
The restaurant stands at the corner of Calle San Martín and Calle Colón in Miraflores. Several other well-known restaurants, including Rafael, are on the same street.
