Why we recommend it

D.O.M. opened in 1999 and remains one of the best-known names in Brazilian fine dining. Chef Alex Atala, who now leads the kitchen with Geovane Carneiro, set out to create a bold, personal cuisine that celebrates Brazil's biodiversity, and when the Michelin Guide arrived in Brazil in 2015, D.O.M. became the first restaurant in the country to receive two stars. It has kept them ever since.

The heart of the cooking is research. The team travels around the country to meet producers and artisans, and the menus use native ingredients that are little known outside their regions, such as jambu, tucupi, açaí, priprioca and bacuri. The restaurant is also known for serving Amazonian ants, which appear often on its tasting menus.

The main option is the tasting menu, a meal of around ten stages running from amuse-bouches through cold and hot starters, main courses and a transition to desserts and petits fours. The concept changes every year, reinterpreting Brazilian classics with these ingredients, and a pairing of ten wines is available. The kitchen can adapt the menu for dietary restrictions and allergies if told in advance, so mention them when you reserve. On weekday lunchtimes there is also a much more accessible executive menu, a revisited version of the everyday Brazilian meal of rice and beans, served with green salad, beiju, two kinds of beans, sautéed potatoes, braised greens with bacon, breaded banana, farofa and a choice of meat, fish or chicken, with dessert and coffee included. It is served from 12:00 to 15:00 and is not available on holidays or over Christmas and New Year, while the tasting menu is also offered on holidays.

D.O.M. is open for lunch from 12:00 to 15:00 and dinner from 19:00 to 23:00 from Monday to Friday, and for dinner only on Saturday. It is closed on Sundays. Reservations are made through the restaurant's website, and the team can be contacted at [email protected].

The restaurant suits travellers who want to understand where modern Brazilian cooking came from, and the weekday lunch makes it possible to experience the kitchen without committing to a full tasting menu. It is on Rua Barão de Capanema in Jardins.
