Virgilio Martínez and Pía León's tasting-menu restaurant in Barranco, named the world's best restaurant in 2023, built around ingredients from Peru's coast, Andes and Amazon.
Jaime Pesaque's flagship restaurant on Avenida La Mar in Miraflores, serving refined contemporary Peruvian cooking à la carte and as the ten-course Mayta Experience.
Good to know
Mayta is the flagship of chef Jaime Pesaque and one of the restaurants that has kept Lima at the top of regional rankings. It describes itself simply as contemporary Peruvian cooking by Pesaque. The restaurant celebrated its tenth anniversary in 2018 by moving to new premises on Avenida Mariscal La Mar in Miraflores, with a new interior and a redesigned menu. It first entered Latin America's 50 Best Restaurants list in 2019, joined The World's 50 Best Restaurants list in 2022 and was ranked number 11 in Latin America in 2025.
The kitchen focuses on Peruvian ingredients, cooked with refinement but still recognisably local. The tasting menu, called the Mayta Experience, runs to ten courses. Dishes that have featured include corn with chullpi, the Andean toasting corn, quinoa and panca chilli; guinea pig with mashua, an Andean tuber, cushuro algae and Andean herbs; and beetroot with cacao and ayrampo, a cactus fruit. Mayta has also been an early champion of pisco infusions and cocktails, and a duck dish served in a skillet has become one of its best-known plates. There is also an à la carte menu, published on the website, which makes Mayta a good option if you want a high-level meal without committing to a full tasting menu.
The restaurant is open every day of the week for lunch, from 12:00 to 15:00, and dinner, from 18:00 to 22:00. If you want the tasting menu, you need to arrive within the set windows, from 12:00 to 13:30 at lunch and from 18:00 to 20:30 in the evening, as the full sequence takes time. Reservations are made online through the booking link on the website, and booking a few days ahead is sensible for dinner.
Being open seven days a week is a practical advantage, as several of Lima's best-known restaurants close on Sundays or Mondays. Mayta suits couples and food lovers who want something polished but a little less formal, and the à la carte option makes it easier for groups with different appetites.
The restaurant is on Avenida Mariscal La Mar in Miraflores, and Pesaque's team also publishes the carta online, so you can plan your order before you arrive.
