Restaurant
Locavore NXT
The successor to Bali's famous Locavore, a tasting-menu restaurant in Lodtunduh with a rooftop food forest and fermentation lab, ranked on Asia's 50 Best Restaurants.
Chris Salans' long-running gastronomic restaurant on Jalan Raya Sanggingan, serving seasonal tasting menus of contemporary Indonesian cuisine in a garden setting.
Good to know
Mozaic is one of the established names of fine dining in Ubud, a gastronomic restaurant on Jalan Raya Sanggingan founded by the chef Chris Salans, who remains its owner. Today the kitchen is led by executive chef and co-owner Blake Thornley. The restaurant describes its cooking as contemporary Indonesian cuisine with an emphasis on sustainability and innovation, and it is a member of Les Grandes Tables du Monde, an international association of fine-dining restaurants.
An evening at Mozaic is designed as a journey through different spaces. Guests start in the Tipple Room, the restaurant's bar and lounge, move through to the Dining Room for the main tasting menu, and finish in the garden. For a more private occasion there is a gazebo in the garden for couples and a Chef's Table in the Workshop, where the team also runs private dining events and cooking classes.
The main menus are a Seasonal Food Menu, which changes through the year to follow the produce available, and a Botanical Food Menu, a plant-focused alternative. Both are tasting menus, and optional wine pairings are drawn from a list that has received a Wine Spectator Award of Excellence. Mozaic also puts on special menus for occasions such as Christmas, so it is worth checking what is running when you book.
The Dining Room opens daily from 6pm to 10pm, and the Tipple Room from 5pm to 12.30am, which makes it possible to come just for a drink. The restaurant has also introduced a small lunch service from Thursday to Saturday at 1pm in the Tipple Room Kitchen, limited to eight seats a day. Children aged six and over are welcome. Booking is recommended, through the reservations page, by phone or by WhatsApp, and the restaurant can be contacted by email for private dining.
Mozaic suits couples and special celebrations, and anyone who wants a classic fine-dining evening rather than a casual meal. Allow around three hours for the full experience. Its position on Jalan Raya Sanggingan, the road leading out of Ubud through Sanggingan, puts it close to the Neka Art Museum, and it is an easy drive from most hotels in the area.
