Mozaic Restaurant Gastronomique
Chris Salans' long-running gastronomic restaurant on Jalan Raya Sanggingan, serving seasonal tasting menus of contemporary Indonesian cuisine in a garden setting.
The successor to Bali's famous Locavore, a tasting-menu restaurant in Lodtunduh with a rooftop food forest and fermentation lab, ranked on Asia's 50 Best Restaurants.
Good to know
Locavore NXT is the next chapter for Ray Adriansyah and Eelke Plasmeijer, the Dutch-Indonesian chef duo whose original Locavore became one of the best-known fine-dining restaurants in Bali. They closed that restaurant and opened Locavore NXT in late 2023 on a new site in Lodtunduh, in Ubud district, describing it as a hyper-local restaurant hub inspired by nature. It has been ranked on Asia's 50 Best Restaurants, placing 44th on the 2026 list, and won the list's Sustainable Restaurant Award in 2025.
The building is part of the experience. Described as tropical brutalist, it has large windows looking out over rice fields, and the site includes a rooftop food forest, a fermentation laboratory and an underground chamber for growing mushrooms. These are not decoration: the kitchen uses them to grow, preserve and develop ingredients for the menu, which focuses on Indonesian biodiversity and seasonal, hyper-local and foraged produce.
Dinner is a long tasting menu, currently called The Source, which can run to around 20 courses. The cooking leans towards plants, though it is not exclusively vegetarian. Dishes on past menus have included mud crab with a garum made from bonito, banana blossom in white curry, cassava noodles with sea urchin and a zero-waste dashi, and raw lamb with fermented and pickled condiments. Menus change, so expect different dishes on each visit.
According to the restaurant, dinner seatings run from 5.30pm to 8.30pm from Monday to Saturday, and lunch seatings from noon to 1.30pm from Thursday to Saturday. There is also a bar, open from Monday to Saturday from 8pm, which takes guests with or without a booking. Reservations for the restaurant are made online and should be made well ahead, especially in the high season. The dress code is relaxed and casual, but alcohol-branded clothing, singlets and beachwear are not allowed. There is a drop-off area and parking on site.
Locavore NXT suits food lovers prepared to set aside a full evening for a long and adventurous meal, and it is best for couples and small groups rather than young families. Allow three hours or more. The site also hosts other venues from the same team, including Nusantara and the Night Rooster bar, so it is worth looking at the whole hub when planning an evening.
