Rodolfo Guzmán's Vitacura restaurant serves the Endémica tasting menu of 12 to 18 preparations built on native Chilean ingredients from coast to desert.
Good to know
Boragó is Santiago's highest-ranked restaurant and a landmark address for contemporary Chilean cooking. Chef Rodolfo Guzmán builds his menu around endemic ingredients gathered from across Chile, from Patagonian seaweed to desert flowers, sourced from around 200 small producers and backed by the restaurant's own research centre. It was ranked number 6 in Latin America's 50 Best Restaurants 2025, and featured at number 29 in The World's 50 Best Restaurants in 2023.
The format is a single tasting menu, Endémica, of between 12 and 18 preparations, which changes with the seasons and with what the foragers and producers bring in. The menu is presented as a long sequence of preparations rather than a few large plates. Earlier menus have included cochayuyo seaweed and a broth of algae and rock plants. There are two pairings, each of five to six glasses: a wine pairing and a juice pairing, the latter a good choice for non-drinkers.
Boragó opens for dinner from Tuesday to Saturday, from 17:15. Bookings are made online with a credit card, and for dates more than 90 days ahead you need to contact the restaurant directly. Book the exact number of guests: a no-show charge applies for each absent diner unless you call to change the reservation, and tables are held for a maximum of 30 minutes. There is a private room for up to 12 people, quoted by email.
Dietary requirements need at least 24 hours' notice. The kitchen can adapt the menu for ovo-lacto vegetarians but does not offer a vegan version, and it cannot guarantee the absence of traces or cross-contamination, so diners with severe allergies or coeliac disease should discuss this before booking. There are no high chairs or children's menu, which makes it best suited to adults and older teenagers.
The restaurant is in Vitacura, and a taxi or ride-hailing app is the simplest way to get there from the centre. Allow an entire evening for the full menu. It is the obvious choice for a special occasion and for anyone curious about Chilean ingredients that rarely appear on menus elsewhere. Contact the restaurant on +56 2 2953 8893, by WhatsApp, or by email at [email protected].
